Wet Washed Process:
What makes this process yield a different flavor profile than the others:
The washed process for robusta coffee beans involves using water to enhance the clarity and brightness of the coffee's flavor.
*Harvesting: Ripe robusta cherries are picked by hand, to ensure quality.
*Sorting: The harvested cherries are sorted to remove any defective or unripe beans.
*Pulping: The sorted cherries are pulped using a machine that removes the outer skin and some of the mucilage (the sticky substance surrounding the beans). This is a crucial step in the washed process.
*Fermentation: The pulped beans are then placed in fermentation tanks, where they are soaked in water for 12 to 48 hours. This allows natural enzymes to break down the remaining mucilage. The fermentation time can vary depending on the desired flavor profile.
*Washing: After fermentation, the beans are thoroughly washed with clean water to remove any leftover mucilage. This helps achieve a cleaner taste and more pronounced acidity in the final coffee.
*Drying: The washed beans are then spread out to dry, until they reach the desired moisture content (around 11-12%).
*Hulling**: Once dried, the outer parchment layer is removed.
The washed process typically results in a coffee that has a bright acidity, cleaner flavor profile, and often highlights the inherent characteristics of the robusta bean, such as its earthy and nutty notes.

Robusta plants are hearty by nature, this farm is not sprayed with any pesticides. All plants are growing organically, living freely on the mountains. Hand picked, with love, when ready.

Store in a cool, dark place
Heat and light break down coffee oils. Keep beans in a cupboard or pantry at room temperature, far from the stovetop, oven, or sunlight.
Avoid moisture
Coffee beans are porous and absorb surrounding moisture, which can ruin flavor. Never store coffee in the refrigerator or freezer for daily use, as condensation occurs when opening the container.
Buy smart & keep whole
Buy in small quantities (enough for 2–4 weeks) to ensure maximum freshness. Keep beans whole and grind only what you need, just before brewing, to retain aroma and flavor.
Minimize handling
Every time you open the bag, you introduce oxygen. Re-seal the bag promptly after each use to protect the remaining beans.

I ordered the tiger and peacock bags to try Indian Coffee for the first time. I like the packaging, artistic. This coffee is stronger than anything I have ever had. I brewed it in my espresso machine. The flavor profile of Tiger is more of my preference, its smooth with a very strong coffee taste. Added a little bit of half/half to ease the strength. I love it and will be ordering again.
