Monsoon Malabar:

The Monsoon Malabar process is a unique method used primarily for robusta beans in India, which involves exposing the beans to monsoon winds and moisture to create distinct flavor characteristics. Here’s how the process works:

*Harvesting: Ripe robusta cherries are hand-picked, ensuring that only the best quality beans are selected.

*Drying: The harvested cherries are initially dried in the sun for a few days to reduce moisture content. This helps prepare them for the subsequent monsoon exposure.

*Storage: The dried beans are then stored in open warehouses during the monsoon season, typically from June to September. This allows the beans to absorb moisture from the humid air and the rain.

*Moisture Exposure: During the monsoon, the beans are regularly exposed to the elements, which causes them to swell and lose some of their acidity. This process can last for several weeks, allowing the beans to develop unique flavor profiles.

*Drying Again: After the monsoon period, the beans are dried again to remove excess moisture, bringing them back to the ideal moisture content of around 11-12%.

*Hulling: Once dried, the outer parchment layer is removed.

The Monsoon Malabar process imparts a distinctive flavor to the beans, often characterized by earthy, mellow tones with a smooth body and reduced acidity, making them quite unique among robusta coffees. If you love the wind like we do, then this coffee will create an uplifting feeling in each sip.

Indian Coffee

I just wrote a review on the Tiger bag and also ordered this in my order to get the deal of free shipping if i get 2 bags. I like this one a lot, different than what i have ever tried. My roommate likes this more than the Tiger bag and I like the Tiger more than this. We brewed it as espresso and mine was with some half/half. My roommate had his shot of espresso black. I can tell you this much, this coffee is stronger than what anyone is used to. I like that it is single origin and how I can see how coffee can taste so differently from how it is processed. My roomie loves the crema, its quite thick. I'll try the other process, Elephant next and will order the Tiger one again.
